Fiesta Potato Salad

Sometimes it is difficult to shop for groceries when you’re single. Everything is packaged so darn big. Take for instance, a bag of baby yellow potatoes. It looked so good at the time, but it was 3 lbs. Bought it anyway. Cooked up a portion and put the bag on my counter.

I had to do something! So, I made up this recipe for you all. Enjoy!

Ingredients
2 lbs. baby yellow or red potatoes
1 tbsp. chopped chives
2 tbsp. chopped cilantro
2 tbsp. chopped green onions
1 Anaheim pepper, finely chopped
½ c mayonnaise
1 large garlic clove, pressed
juice and zest of 1 large lime

Yes, I know, chives and green onions. I had both in my kitchen that I needed to use up. Make the dressing first in a small half pint mason jar. Blend all ingredients well, set aside.

Preheat air fryer and add the potatoes to the basket. Cook at 400°, shaking the basket well every 2 minutes for 16 minutes. Adjust for your air fryer temp and time. I like the potatoes slightly browned on the outside and still a bit soft inside.

Chop the herbs, green onions and pepper, place in bowl the potatoes were in. Let the potatoes cool slightly on a sheet pan, then toss in the bowl, adding the dressing to your liking. For a bit of dressing up, I garnished with crumbled feta cheese but cotija cheese will be just as good!
