I felt like spicy comfort food last night, so I made a cast iron skillet dinner! My jam is Mexican food, so I had most of the ingredients in my pantry.
Ingredients
1 14oz can low sodium black beans
1 19oz can enchilada sauce, I use Old El Paso
6 small red potatoes, cut in small pieces
½ yellow onion, chopped
1 Anaheim pepper, quartered and sliced
1 ½ cups cherry tomatoes, cut in halves
1 8oz package Colby Jack cheese, shredded
1 ½ cups of tortilla chips, roughly broken
Directions
Preheat oven to 350°
In 10†cast iron skillet, sauté onion in canola oil until soft and beginning to brown. Add Anaheim pepper and cook another 3 minutes, stirring frequently. Add the cherry tomatoes and cook about 2 minutes. Turn heat off and add the potatoes and black beans. Add enchilada sauce and mix well. Add the tortilla chips and mix until they are coated with sauce. Top with cheese and bake for 30 minutes. Serves four hungry people!
