Yeah, yeah, yeah. Yesterday was Cinco de Mayo. Hence the taco cups! Changing out the cheese can make these vegan. Makes 18 cups
Ingredients
2 14oz cans low sodium black beans, drained & rinsed
1 red bell pepper, diced
4 green onions, sliced
1 4oz can diced green chiles, I used Hatch
1/3c Trader Joe’s Enchilada sauce (bottle) or sauce of choice
2 Burrito sized flour tortillas
1 cup shredded cheddar cheese, I like white cheddar
Directions
Preheat oven to 350°
Cut the ends of the tortillas to form a square, then cut into quarters. Set aside.
Add the 5 top ingredients except cheese and mix well.
Using a regular muffin pan, spray each well with cooking spray and gently push each tortilla square inside. Fill with bean mixture and top with cheese.
Bake for 15 minutes or until the tortilla edges are golden brown. Remove from oven and top with more cheese. Garnish with salsa, sour cream or guacamole!  To reheat, bake at 325°  for at least 10 minutes.Â
