Ah, the summer brings out fresh vegetables and healthy appetizers! On Sunday, it was my summer cowboy caviar, from readily available produce with black beans.
Ingredients
1 15oz can low sodium black beans, drained & rinsed, lightly mashed
1/3 cup chopped yellow onion
1 small carrot, grated
1 plum tomato, chopped
1 lime, juiced and zested (1/4c juice and 1 tbsp zest)
1 tbsp minced cilantro leaves (or more to taste)
1 tsp minced jalapeno (or more to taste)
1/3 c roasted white sweet corn, I used my air fryer for 4 min, shaking basket often

Directions
Mix all ingredients well and cover. Refrigerate an hour to allow flavors to blend. Serve with your favorite tortilla chips. I used the leftovers for either enchiladas or in scrambled eggs!
