I happened to have a few items in my kitchen that needed to be eaten. Next was a quick trip to the grocery store to purchase fresh raviolis. My quick dinner was one of the best I have ever made up!
Ingredients
Olive oil
1 small shallot, minced
3 small cloves garlic, minced
½ Boursin garlic & herbs cheese
2 tablespoons fresh lemon juice with zest
½ cup dry white wine, optional
2 cups cherry tomatoes, cut in half
2 cups arugula or baby spinach
Finely grated pecorino or parmesan cheese for garnish
Directions
Use 1 ½ tablespoons olive oil in non stick pan on medium heat and sauté shallots and garlic for about 2-3 minutes, don’t let it brown very much. Add the lemon juice and wine, stir well. Add the Boursin cheese in small pieces and mix well. Add more cheese if you want your sauce creamier. Let it reduce until you have your desired consistency.
While the sauce simmers, cook the raviolis until they float in your pot and drain.
Lower the heat to medium low (not bubbling) and add the cherry tomatoes, sauté until they soften a bit. Now add the arugula and cook until it wilts. Remove from heat and place in large serving bowl or dish. Add the raviolis and gently mix. Garnish with pecorino or parmesan and enjoy!
NOTE If you want more protein, garnish with pumpkin seeds. Did you know that they contain 8-9 grams of protein!?
