Almond Chocolate Bites! #NoBakeBites

I was in the mood to make a healthy treat for our team before I left town last week for a real estate conference. After finding a few recipes and changing the ingredients to make it Laurie style, I made this recipe up and sharing with you!

Ingredients

1 cup Medjool dates, pitted, cut in half
1 cup dried cranberries
1 cup slivered or sliced almonds
1/2 cup fresh almond butter
4 squares of your favorite 3+ oz chocolate candy bar, I used dark chocolate raspberry that I bought at the Boise Co-Op
Powdered sugar

Directions

In a food processor, break up the four squares of the bar and pulse in food processor until the chocolate resembles small bits. Add the almond butter, dates, cranberries, almonds. Process until the mixture is thoroughly combined. You will be able to tell because you will think to yourself, hey I can make balls out of that!

I scraped it all out of the food processor into a mixing bowl and used a 2 tablespoon coffee scoop (Thank you, Starbucks) to form the balls. I am sure a melon baller will work just as well. Place the balls on a baking sheet lined with parchment paper. Put sheet pan in the refrigerator to set, overnight is best. Pull out and roll in powdered sugar, arrange on a platter and serve!

You should have 20-24 balls depending on size.
