Almond Flour Banana Bread #GFBananaBread

I have a confession to make. I bought a 5lb bag of almond flour at Costco with no plans on what to do with it all. Not a good idea, note to self.

So, I thought I would make good use of the bananas I had in my freezer. I searched a few recipes, added this or took out that for my final version. Enjoy!

Ingredients
3 very ripe bananas
3 eggs
3 tablespoons unsweetened almond milk
1 teaspoon vanilla or almond extract
2 ¾ cups packed fine almond flour
1 teaspoon baking soda
½ teaspoon sea salt
½ cup finely chopped pecans or walnuts

Directions

Preheat oven to 350 degrees. Line a loaf pan with either parchment paper or grease pan. Set aside.

In a medium bowl, mix the wet ingredients. Bananas, eggs, milk, extract and mash the bananas well. In a large bowl, mix the dry ingredients with a whisk. Add the wet mixture to the dry mixture and combine. Fold in your chopped nuts.

Pour mixture into loaf pan, smoothing the top. Bake for 50 minutes or until what you use to test (knife) comes out clean from the middle of the loaf. Cool bread for at least 15 minutes. Best eaten warm! For next day, I suggest warming a slice in microwave for 10 seconds.
