Chicken & Shaved Brussels Stir Fry #SpicyStirFry

There is nothing better than tender chicken and vegetables in a stir fry. I had a Costco package of chicken thighs from Costco and this weekend I had a craving for Brussels sprouts. Stir fry!

Ingredients

1 pound package boneless, skinless chicken thighs
1 10oz bag shaved brussels sprouts from Trader Joes
1 large carrot, grated
3 green onions, sliced
1 garlic clove, pressed
½ teaspoon grated ginger or ginger juice
8oz container sliced mushrooms
1 tablespoon sesame oil
½ teaspoon hot chili oil
¼ cup flour
1 tablespoon sweet paprika
1 tablespoon ground cumin

Directions

Combine flour, paprika and cumin in large plastic bag. Trim chicken thighs of fat and cut into 2” pieces. Add chicken to flour mixture, coat evenly and set aside. Prepare the vegetables and set aside.

Add sesame oil to large fry pan over medium high heat and brown the chicken, about 4 minutes. Add the garlic and ginger, stirring until mixed well with meat, stir another 2 minutes. When meat is evenly browned, light in color, remove from pan and set aside in medium bowl. Add the hot chili oil to the pan and stir fry the vegetables, add more sesame oil if you need to. This should not take long! Return chicken to pan and serve immediately. Garnish with sesame seeds.

My picture doesn’t do justice to how great this tasted. I think it needs some thin sliced red bell pepper next time??
