Edamame Hummus

I don’t know why I just cannot seem to follow a recipe these days! I combined two different recipes, added or took out a few ingredients, and the result is below for you to try. This is a dish I made last night for an Idaho Smart Growth house party at Rachel & Tim’s. It was a huge hit! Also, if you have a guest that does not like cilantro, omit the coriander and substitute the cilantro for flat leaf parsley.

1 ½ cups frozen, shelled edamame

¼ cup tahini

¼ cup warm water

¼ cup extra virgin olive oil

1 teaspoon fresh grated lemon zest

¼ cup fresh lemon juice

1 clove garlic

½ teaspoon sea or kosher salt

½ teaspoon ground cumin

½ teaspoon ground coriander

¼ cup cilantro or flat leaf parsley, finely chopped

Boil or microwave beans until soft, but not too soft! In a food processor, puree the edamame until smooth. Add remaining ingredients until well blended. Serve with pita bread cut in individual slices or pita chips. Also a great dip with rice crackers.
