Puff Pastry Cheese Crackers

Politics aside, I have to distract myself, especially today because the Senate passed a heinous bill. Time will tell and teach them the consequences. So, I turned to the one thing that brings me joy, and that is playing in my kitchen. I miss the crispy cheese crackers from Trader Joe’s, so I found a recipe I could adapt. Here is my version of deliciousness!

Ingredients

I package of frozen puff pastry, thawed
1 cup of shredded white cheddar, preferably Tillamook
Cayenne pepper or desired dried herb such as thyme
Other: 1 large and 1 smaller baking sheet pan

Directions

Preheat oven to 450°

Lightly flour pastry mat and roll the puff pastry to a thin rectangle. Sprinkle the cheese over the right half and sprinkle lightly with cayenne pepper. Fold the remaining half over and roll again.

Cut into small squares or rectangles, depending on what you want to use the crackers for. Place parchment paper on large baking sheet and cover with parchment paper again. Believe it or not, place another baking sheet on top. This prevents the crackers from over puffing and yet it still will result in a crispy cracker.

Now, I have an electric oven and these baked fast. You will probably need more time in a gas oven. Electric 15min. Gas 17min. Keep an eye on the crackers because you want them baked to a golden color. I pulled out early but kept the top pan on to ensure cracker would be crispy.

Let them cool completely. Store in an airtight container such as a French canning jar as displayed.
