I have been on a meatball kick, using my air fryer to cook and brown instead of frying or baking. And since my Aero Garden is producing herbs, I had an opportunity to put this together recently. The size of the meatball determines the cooking time, fyi.

Ingredients
1 lb ground lean chicken
1 tblsp mayonnaise
1/3 cup ground rice crackers or panko
1 large shallot, chopped
1/3 cup chopped fresh herbs, basil is my favorite
Salt and pepper to taste
Directions
Combine all ingredients in large bowl and gently form your balls. I use a small cookie scoop for 1.5 inch balls, 2 tablespoon size.
Preheat air fryer to 370 degrees at 12 minutes. When the timer is at 10 minutes, place chicken in air fryer basket. Do not crowd, work in batches if need be. At 5 minutes, check the chicken balls and shake the basket.
NOTE: cooking times vary based on your air fryer, size of the balls. Use this time as an estimate.
When the chicken balls are done, I toss them in my favorite buffalo sauce with blue cheese dressing. I find that Trader Joe’s has the best blue cheese dressing, too!
